Le vin : Quelle claque que ce millésime 1985 ! Ce vin doux naturel rouge a subi un élevage oxydatif en extérieur durant 1 année en dame-jeanne suivi de 27 ans (!) en foudres de chêne. Le résultat est une cuvée unique à la robe tuilée où des arômes de pruneau et de fruits noirs confiturés se mêlent à des notes de moka, cacao, figue séchée, noix et poivre dans un équilibre sublime. Une bouteille à déguster sur des fromages à pâtes persillées ou des desserts chocolatées. Un régal de complexité et de gourmandise !

En préambule, nous vous offrons ici un café de la plus haute qualité, dès sa récolte, les grains de café variété Castillo entièrement mûrs sont cueillis, le café est lavé et les cerises couleur pourpre choisies sont immergées dans un réservoir avec de l’eau afin de retirer celles qui flottent et garantir un café de première qualité. Ensuite, l’eau est drainée et les cerises sont déposées dans un récipient ou un sac pendant 16 heures puis elles sont séchées jusqu’à ce que le taux d’humidité requis soit atteint.
Par la suite, les cerises de café sont déposées pour une durée allant jusqu’à 3 mois, dans des fûts de chêne qui ont contenus pendant au moins 8 ans d’Amaretto.
Vendu exclusivement en grains , afin de vous faire profiter du mélange des fragrance de café et d’Amaretto au moment de moudre les grains, de sentir des arômes avant de déguster ce café 100% arabica de Colombie.
